When I think about guacamole, I think about a putting together a fiesta! There's just something special when you combine fresh cilantro, perfectly ripe avocados, delicious roasted garlic, shallots, tomatoes and some zesty lime juice. It's just begging to be put on fajitas, nachos or on a kick ass Southwest salad. No matter how you use it, take a minute to make it fresh! Fresh guacamole will always beat any store bought... unless it is fromChica de Gallo(no, this is not a paid advertisem*nt!) which is really good too.

For this easy guacamole recipe, the only equipment you need is a cutting board, sharp knife, a bowl, one fork and one spoon. Really, you don't even need the spoon if you peel the avocado. It's just easier to scoop out the green deliciousness with the spoon.

QUICK COOKING TIP:Speaking of avocados... Here's an AWESOME tip if you love them as much as I do. So I buy between six and ten avocados every week. Did I mention that I love them? I always had trouble with them all becoming ripe at the same time and then I couldn't eat them all fast enough before they went bad. Well, I learned a trick from a friend who owns a Mexican restaurant. Once your avocados start to ripen, put them in the refrigerator. They will hold at a nice ripeness foranother 4-5 days. Plenty of time to whip up this easy guacamole recipe or add to eggs or even to a delicious watercress salad with some bacon and lemon vinaigrette.

EASY GUACAMOLE RECIPE

A super easy guacamole recipe with balanced flavors.

Ingredients

  • 2 Ripe Avocados, cut in half lengthwise and the pit removed.
  • 2-3 cloves Roasted Garlic
  • ½ Lime, juiced (if the lime is not really juicy, add the whole thing)
  • ½ Shallot, minced fine
  • ½ Cup chopped tomatoes, I like the baby sweets
  • 2 tablespoon Chopped Cilantro
  • ⅛ teaspoon to ¼ Cayenne
  • A pinch or two of salt, to taste
  • 4-5 Grinds of Fresh Cracked Pepper

Instructions

  1. Get out a bowl.
  2. Scoop out the avocado with a spoon and then mash with a fork.
  3. Add in the remaining ingredients and mix well.
  4. Taste.
  5. Adjust seasonings.
  6. Taste again.
  7. And again.
  8. Enjoy.

Keep in mind that recipes are more like guidelines than something you have to follow exactly. If you don't like cayenne or tomatoes, substitute them for something else that you like. I've had blue cheese guacamole, mango guacamole, bacon & sage guacamole, tomatillo guacamole, ramp guacamole, spinach guacamole... and the list goes on! Basically you are looking for a good acid to work against the fatty avocado with some spices tossed in and a bit of veggie for crunch!
