Now if you think this dessert tastes bland because it uses only three ingredients- you’re wrong! It’s perfectly sweet from the apples and a bit savory from the pastry dough.It’s probably my favorite dessert ever!
It’s exactly how my mother made it for me when I was little (and she still does when I come to visit). Its deliciousness comes from its simplicity.
Some people may add raisins, additional sugar, or almond slices… but I think this just distracts from the delicious taste of the apples.
Vegan Puff Pastry
Depending on where you live, vegan puff pastry might not be the easiest ingredient to get. Here in Austria, we are lucky that most of the puff pastries are accidentally vegan – some brands even embrace it and include the vegan label on the packaging, which makes it even easier to spot the vegan ones.
In the US, Pepperidge Farm’s puff pastry dough should be vegan. I’d always recommend checking the ingredients though – just to be sure.
Sweetness
I didn’t add any additional sweeteners to the filling – just the apples and cinnamon. So definitely use red, sweet apples, like Pink Lady, Red Delicious or Royal Gala. If you want it sweeter, you can add a little bit of sugar to the apples slices.
How To Make Vegan Apple Strudel
As always you will find the whole recipe with measurements in the box below but I want to give you an overview of the key ingredients, variations, and the process with step-by-step photos first.
The Ingredients
You will need:
Puff Pastry – Make sure it’s vegan. Oftentimes the cheapest puff pastries are accidentally vegan. I’m using refrigerated puff pastry with the following dimensions: 16×9 inches or 42×24 cm. In the US: Pepperidge Farm’s puff pastry dough should be vegan (but check the ingredients to make sure!).
Apples: The sweeter the apple, the sweeter the apple strudel. I actually used two different kinds of apples and it turned out perfect. So just use the apples that you like, as long as they are sweet. Sour or tart apples wouldn’t really be a good fit for this recipe.
Cinnamon powder
You can add powdered sugar on top, but that is completely optional. For the first time in my life, I made powdered sugar out of granulated sugar by blending it, and it was so quick and worked perfectly well. So that I will never buy powdered sugar again. My mind is blown.

2red, sweet applese.g. Pink Lady, Red Delicious or Royal Gala
3/4teaspooncinnamon
powdered sugar for dusting the top (optional)
Instructions
Preheat the oven to 350°F/180°C. And take the vegan pastry dough out of the fridge to thaw.
Remove the apple core, e.g. with an apple corer.
Slice the apples with a mandoline slicer or a knife. Add the cinnamon.
Give the apples and cinnamon a good mix. Don't worry about the apple slices breaking.
Place the apple filling onto the upper part of the puff pastry but leave out the edges.
Fold the lower part of the puff pastry over the apple filling and close the edges.
Bake the apple strudel in the oven for 15-20 minutes. Until golden on top.
Let it cool off or eat it warm. Either way, it's delicious. You can dust it with powdered sugar.

Is puff pastry vegan? Not all store-bought puff pastry is vegan, but you're safe with brands like Pepperidge Farm and Wewalka. When you pick up a packet in store, make sure to scan the back for ingredients like eggs and butter, as, of course, these are not vegan.
Apple strudel consists of an oblong strudel pastry jacket with an apple filling inside. The filling is made of grated cooking apples (usually of a tart, crisp and aromatic variety, such as Winesap apples) sugar, cinnamon, and bread crumbs. Strudel uses an unleavened dough.
You can store it, covered with foil or plastic wrap, at room temperature for up to 2 days. You can also store it in an airtight container in the fridge for an additional 2-3 days. Try to keep it stored on the bottom shelf where it's the coldest – baked strudel gets soggy as time goes on.
Other plant-based substitutes for egg wash include maple syrup, flaxseed, nondairy milks like rice milk and almond milk, molasses, aquafaba and various blends with olive oil or vegetable oil.
Strudel (in Yiddish, שטרודל, pron. shtrudl) in general is also associated with Ashkenazi Jewish cuisine, particularly of German, Swiss, and Austrian Ashkenazi Jews. Apple and raisin filling is popular, but cabbage has historically also been used as a filling for a savoury strudel.
Easy to confuse due to the similar names, strudel and streusel are actually different types of dessert. An apple strudel has thin sheets of pastry wrapped around the filling, while streusel is a crumbly sweet topping of sugar, flour, and butter that is often layered over pies and cakes.
Apple turnovers are typically made with puff pastry that's filled with cooked apples, then sealed by folding the puff pastry over itself. Apple strudels are long, oblong pastries made with multiple layers of dough that's stretched thin and stuffed with spiced apple filling.
Some rely on vinegar to help the dough stretch without springing back. Bread flour gets the thumbs-up in many recipes because its higher gluten content makes the dough more elastic.
It's an easy pitfall because fruit releases a lot of liquid when it bakes. Thickeners you mix into the filling, like cornstarch, soak up a lot of the liquid, but sometimes not all of it. Plus, as it bakes, the crust itself releases moisture in the form of steam. Often, blind-baking solves this problem.
The Apple Strudel will keep in the fridge for up to 2 days. Reheat until crisp and hot. Alternatively, freeze the strudel, whole or in slices, for up to a month. Allow to defrost if frozen and reheat in a hot oven for a few minutes until hot.
Strudel can be enjoyed cold or warm. We recommend heating strudel up before serving to crisp up the dough and to slightly warm the filling inside. Drizzle some powdered sugar on top and enjoy with a dollop of whipped cream, vanilla ice cream (or any flavor you like).
You can make the strudel up to a day ahead. Brush it with butter to stop the pastry from drying out, then wrap well and keep chilled. It can also be frozen before baking. Simply wrap well in baking parchment and cling film, then place on a tray and freeze until firm.
ARE JUS-ROL PRODUCTS SUITABLE FOR A VEGAN DIET? Jus-Rol Puff Pastry dough, Flatbread dough and Pie Crust dough are Vegan-friendly. However, our pizza doughs contain milk, which are not suitable for a Vegan diet.
Which shop-bought pastry is vegan? If you're short on time and decide to buy ready-made pastry, always check the ingredients on the packet. In general, most brands (including Jus-Rol and most supermarket own-brands) are vegan, except for the luxury all-butter varieties which contain milk.
Does puff pastry have eggs in it? Some puff pastries have eggs, but the regular manufactured dough does not contain eggs. Manufactured puff pastries contain additives like calcium carbonate, reduced iron, vitamin C, and mono and diglycerides to extend their shelf life.
Puff pastry, also known as pâte feuilletée, is a flaky light pastry made from a laminated dough composed of dough (détrempe) and butter or other solid fat (beurrage). The butter is put inside the dough (or vice versa), making a paton that is repeatedly folded and rolled out before baking.
