Thanks interesting, Erin. I've never heard of cooking them in a skillet before! Probably less steps than this one, but this definitely feeds our whole Thanksgiving crowd of 10-12 people.

I used to eat country crock, and I loved it. I haev since found out about how bad vegetable oils are and now I use real butter, coconut oil, and healthy fats. Weston A Price Foundation advocated for animal foods, and not processed foods. Here's to your health!

FAQs

How do you keep sweet potato casserole from being runny? ›

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

How do you thicken sweet potato casserole? ›

How do you thicken a sweet potato casserole? If you are not adding eggs, you can thicken your sweet potato casserole by adding a bit of flour or cornstarch. You will need about 2-3 tablespoons of flour and 1 tablespoon of cornstarch.

What to serve with sweet potato casserole? ›

I love to serve this sweet potato casserole as a side dish, alongside roasted turkey and chicken, glazed ham, and perfectly seared steaks. But since the flavors are reminiscent of pumpkin or sweet potato pie, this also makes an excellent dessert.

What's the difference between sweet potato pie and sweet potato casserole? ›

The difference is that sweet potato casserole can either have a toasted marshmallow top or a crunchy brown sugar/nut top and is made with brown sugar in the casserole. Sweet potato pie is made with white sugar, has nothing on top, but can be served with whipped topping.

Why put egg in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy.

How do you make a casserole less runny? ›

Make a cornstarch slurry for a fast and easy thickener.

A few minutes before your casserole is done, add it a little at a time until you are happy with the thickness. Then, let the casserole finish baking. You can also substitute chickpea flour for cornstarch. Chickpea flour is an excellent thickener for savory dishes.

How do I know when my sweet potato casserole is done? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

What makes a casserole thicker? ›

The three main thickening agents for gravies are flour, cornflour and arrowroot. The first two are normally used in savoury dishes while arrowroot tends to be used in sweet dishes – that said, arrowroot will work in a savoury dish as it has no flavour.

Is sweet potato casserole supposed to be jiggly? ›

Bake the casserole for 35 to 45 minutes, until the filling is hot, does not jiggle when you shake the dish, and the topping has browned.

What variety of sweet potato is best for casserole? ›

Orange sweet potatoes are excellent for baking, roasting or in casseroles. Orange sweet potato varieties include the Covington, Belleview and Beauregard.

How many days can you eat sweet potato casserole? ›

To Store: Store sweet potato casserole covered in the refrigerator for 4-5 days. To Freeze: Prepare the sweet potato casserole completely, but don't bake it. Cover with a double layer of aluminum foil and freeze for up to 3 months.

What's the difference between yams and sweet potato casserole? ›

Yams and sweet potatoes differ in flavor and appearance, and they are not related. Sweet potatoes are in the morning glory family, while yams belong to the lily family. Yams aren't as sweet as sweet potatoes, and they are starchier and drier. Their texture and flavor are more similar to potatoes or yuca.

Why is sweet potato casserole not a dessert? ›

Many contend the traditional southern dish is 100 percent a dessert, because its served in a pie crust. But others argue sweet potatoes are vegetables, regardless of the crust, and nobody considers meat pies dessert.

Do you peel sweet potatoes before boiling for casserole? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Should sweet potato casserole be firm? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

What do I do if my potato bake is too runny? ›

Try letting the dish rest for 10 minutes or so to let the water get absorbed and let the sauce thicken. Try cooking your recipe longer.

How do you make sweet potato mash less watery? ›

I was never a huge fan of mashed sweet potatoes until I discovered a technique from Cook's Illustrated. They simmer the potatoes right in the cream rather than boiling them in water. This is a complete game changer to say the least! Instead of a watery mash, you end up with an ultra creamy texture guaranteed to please.
