When it’s citrus season here in Cyprus oranges and lemons are in such abundance they are laying on the streets. Literally! They are everywhere.

I’m constantly trying to develop new recipes to use delicious, sweet, fragrant oranges.

Key Ingredients

FRESH ORANGE JUICE

You probably noticed I didn’t write how many oranges to use in this recipe. Each type of oranges is different. I usually use 3 medium size oranges to get 2/3 cup juice. You may need more or less depending on how big or juicy your oranges are.

What oranges are best? Navel, Valencia and Blood Oranges will do great. For a sweeter twist you can even try tangerines.

ORANGE ZEST

Orange zest is very fragrant ingredient. If you are a big fan of it (hi Mom!) you can use more than written in the recipe. Heck, you can even peel all of the oranges you will use for juice. Be careful however to only peel the orange outer layer. White part may be bitter. I use tiny grater that works great for citrus peel. Regular grater will also do when you use the finest side.

VEGETABLE OIL

I like to use a neutral oil like: canola, grapeseed or sunflower oil.

You could also use olive oil, but since it has a strong flavor you may actually feel it in the cake.

PLANT BASED MINK

Any type of plant milk will do. I like to use almond milk or soy milk.

ALL PURPOSE FLOUR

I usually use all purpose wheat flour to make vegan orange cake. If you want to add a healthier twist, you may substitute 1/2 to 1 cup with whole wheat flour. The cake will be a little denser and less fluffy.

VANILLA EXTRACT

Vanilla is a great flavor to combine with orange. You can also use a bit of orange extract to boost the citrus flavor even further.

BAKING POWDER

You can substitute it with baking soda which will work great in this recipe, as orange juice is acidic. Just use less than a teaspoon.

How To Make Vegan Orange Cake

PREPARE ORANGES

Wash oranges, grate the peel from one of them. Juice oranges to have enough juice for the recipe.

PREPARE CAKE BATTER

In a large mixing bowl whisk wet ingredients: fresh orange juice, vegetable oil and vanilla extract.

You can mix dry ingredients together, but you don’t have to. Add dry ingredients to the bowl with wet ingredients and mix until you get thick batter.

Place the dough in the cake pan lined with the parchment paper. You can place thin orange slices on top as a decoration.

NOTE – you can use either loaf pan or round cake tin, depending on how you want to cut your cake.

BAKE

Place vegan orange cake in the oven preheated to 180°C / 350°F. Bake for 40-45 minutes. In order to make sure it is well baked, insert the toothpick in the center of the cake. It should come out clean.

After taking the cake out of the oven wait 5 minutes and take it out of the pan. Place on the wire rack for cooling.

If you want to add more sweetness and orange flavor, you can decorate top of the cake with orange icing. Just mix 1/2 cup of powdered sugar with 1 tablespoon of orange juice.

Questions & Answers

WHY ICING SUGAR?

I tried this recipe with various sugar types and icing sugar works best, resulting in light and fluffy cake. I used brown sugar and the cake turned out ok, but a bit more heavy and wet.

What Else Can I Add To The Cake?

If you like you can add more goodness to the best vegan orange cake. While mixing the dough add one of the following:

  • 1/2 cup blueberries
  • 1/2 cup chopped nuts (like pecan, walnuts, hazelnuts)
  • 1/2 cup dark chocolate chips

Frosting Ideas

  • dark chocolate melted with 1tbsp coconut butter
  • 1/2 cup powdered sugar + 1 tbsp orange juice – for an orange glaze

How To Store It?

This eggless orange cake will be ok for 2-3 days on the countertop at room temperature. It freezes well too if you want to save some for later.

Ingredients

  • 2 cups all purpose flour

  • 1/2 cup icing sugar

  • 2/3 cup fresh orange juice

  • 2/3 cup soy or almond milk

  • 1/3 cup oil (sunflower, grape, colza oil)

  • 2 tsp baking powder

  • orange zest from 1 orange

  • 1 tbsp vanilla extract

  • Orange Glaze
  • 2 tbsp fresh orange juice

  • 1/2 cup icing sugar

Directions

  • In a large bowl mix all purpose flour, baking powder and icing sugar.
  • Before juicing oranges grate the peel from one of them. Add to dry ingredients and mix in.
  • In another bowl or cup mix vegetable oil, vanilla extract and orange juice (2/3 cup) – they don’t need to be perfectly combined.
  • Add liquid ingredients to dry ones and mix with spatula just enough for the dough to come together. Don’t overmix. The dough should be loose and shiny. If you see it’s still dry and hard to stir add 2tbsp juice more.
  • Place your dough in a loaf tray lined with parchment paper. Even the surface using spoon or spatula.
  • Bake at 180°C / 350°F for 40-45 minutes. Your cake is ready when toothpick you poke inside comes out clean.
