Course: Appetizer, Bread, Breakfast, Kid Favorite, Side Dish

Keyword: Golden Corral

Ingredients

  • 1 envelope Active Dry Yeast
  • 1/4 cup very warm Water
  • 1/3 cup Sugar
  • 1/4 cup Butter
  • 1 teaspoon Salt
  • 1 cup scalding hot Milk
  • 1 Egg lightly beaten
  • 4 1/2 cups sifted All-Purpose Flour
  • 2 tablespoons melted Butter for brushing the rolls.

Instructions

  • Sprinkle the yeast over very warm water in a large bowl (Very warm water should feel comfortably warm when dropped on wrist.)

  • Stir until yeast dissolves.

  • Add sugar, the 1/4 cup butter or margarine and salt to hot milk and stir until the sugar dissolves and butter or margarine is melted.

  • Cool mixture to 105 to 115°F.

  • Add milk mixture to the yeast, then beat in egg.

  • Beat in 4 cups of the flour, 1 cup at a time, to form a soft dough.

  • Use some of the remaining 1/2 cup of the flour to dust a pastry cloth.

  • Knead the dough lightly for 5 minutes, working in the remaining flour (use it for flouring the pastry cloth and your hands).

  • Place dough in a warm buttered bowl. Turn greased side up.

  • Cover and let rise in a warm place until doubled in bulk, about 1 1/4 to 1 1/2 hours. Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth.

  • Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be.

  • Pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4 inches in diameter.

  • Place in neat rows, not quite touching, in a well-buttered 13 x 9 x 2-inch pan.

  • Cover rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes.

  • Brush tops of rolls with melted butter or margarine, then bake in a 375°F oven for 18 to 20 minutes or until nicely browned.

  • Serve warm with plenty of butter.

This recipe yields about 2 dozen rolls.

FAQs

What kind of rolls does Golden Corral serve? ›

Golden Corral's signature Yeast Rolls are a labor of love- mixed and kneaded, proofed and cut, refrigerated for 24 hours, proofed again, then baked until golden brown. We make thousands of these rolls per week.

Why did my yeast rolls turn out tough? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

What is the difference between a bun and a dinner roll? ›

Can you use milk instead of water in yeast rolls? ›

You would enrich the dough with milk proteins and fat. You will need a bit more milk than the amount of water required (because of the milk solids). The dough will be softer, the crumb less open.

Is milk or egg better for puff pastry? ›

For sweet/dessert pies we may use a light brushing of milk and sprinkle on a little sugar, not for browning but to add a little sugar crunch on top of the pie. Egg wash is the most reliable but it can be very thick and sticky. Milk wash will go on more evenly but it can soak into pastry and make it weaker.

Can you let yeast rolls rise too long? ›

“If the dough has risen too long, it's going to feel fragile and might even collapse as you poke it,” says Maggie. If this is the case, there's a chance you can save your dough by giving it a quick re-shape.

Can you over knead yeast rolls? ›

Doughs usually flop when they are severely under or over-kneaded. That being said, it is quite easy to over-knead dough. Knowing why kneading dough is essential and how you can avoid over kneading it, is an integral part of the bread-making process.
